Moussaka From Ioannina Greece Recipe

2 large eggplants cut into 1 inch cubes
1 large diced onion
3 cups tomato sauce
1 cup olive oil
2 teaspoon sugar
500 g (1lb) ground beef
500 g (1lb) ground lamb
1 glass dry red wine ( to keep the recipe very Ioannian - use Mavrodafni wine - if you don't have it - use Bordeaux)
1/2tspoon allspice
dash tspoon nutmeg
dash cinnamon
salt and pepper
1.5 kilo potatoes
sweet paprika
1 cup Kefalotiri cheese (if not available make a mix of Feta cheese and Parmesan)

Heat 1/3 cup oil and add eggplants and diced onion. Fry them at medium heat until onion is translucent. Add the tomato sauce and boil it gently at low heat to reduce. Add 1/2 cup wine, sugar, salt, pepper, oregano and thyme. Set it aside.
Heat 1/3 cup oil and fry the ground beef and lamb with the allspice, nutmeg and cinnamon, add salt and pepper and in the end, the last 1/2 cup of wine. Set it on the side.
Fry the potatoes in the remaining 1/2 cup oil. Sprinkle with salt and paprika.
In a large oven dish layer in the following order: potatoes, meat mixture, eggplant mixture and repeat to end with the eggplant mixture.
On top of the dish sprinkle with the cheese.
